I love North Fork arugula and it really doesn’t need much. In my longing for summer, I paired this salad with some guava vinagrette and white cheese that you can find in any Latin grocery. In Brazil and other parts of Latin American they often pair this cheese with guava paste as an appetizer know as “Romeo e Julieta”. I decided to make a dressing from the guava paste by merely pureeing it with a bit of orange juice and putting in a squeeze bottle to top the arugula salad. Toss your arugula with olive oil and vinager, salt and pepper and top with crumbled white chese with a squeeze of guava puree and you’ll have your own “Salada Romeo e Julieta”. In this photo you’ll also see that it’s topped with Satur Farms micro celery which makes for a beautiful garnish for anything from soups to salads or sandwiches.
