Shopping list
For beef skewers: 3 lbs of flank steak, one small jar crunchy peanut butter, one can of unsweetend coconut milk, small honey bear, small bottle of soy sauce, EVOO, red wine vinegar, salt, pepper and bamboo skewers.
For grilled corn and black bean salsa: 6 ears of fresh corn, 1 can of Goya black beans (or one cup of dried black beans soaked overnight — recipe in next posting), 1 small red onion, two jalapeno peppers, 1 tablespoon of fresh cilantro, 1 red pepper and one green pepper. Buy a bag of crunchy tortilla chips to serve along side.
