1 pound of seasoned and sauteed fresh cod
4 small potatoes, peeled and quartered
4 tablespoons extra virgin olive oil
1 tablespoon of chopped cilantro
1 egg
one egg yolk (save the white for breakfast)
1/2 teaspoon of lime juice
Salt and pepper your cod fillet and saute, browning on both sides. Let cool. Squeeze lime on fish.
Cook potatoes till fork tender-salted water then chop onion, cilantro.
Drain potatoes and let cool. Mash with olive oil, mix in eggs and add flaked cod fish and cilantro.
Form into patties and heat medium size pan with 2 tablespoons of olive oil. Brown patties on each side.
Serve with a fresh watercress salad. Toss with oil and vinegar or your favorite citrus vinaigrette.
