With so many rich holiday foods, it is nice to have a treat with fresh, bright flavors. These no-bake, raw ingredient cookies will break up the sugar monotony. Zesty, herbaceous, and with just a touch of sweetness, they’ll cost you almost no time at all.
Toss any leftover basil in a green salad with blood oranges and some pomegranate vinaigrette, and call it dinner.
Ingredients:
2 cups walnuts, roasted
3 tbsp. local honey*
2 heaping tsp. lemon peel, freshly grated
2 heaping tsp. fresh basil, chopped finely
In the bowl of a food processor, pulse the walnuts into a coarse meal. Take care not to over-process the walnuts, or they’ll release too much oil, and the cookies won’t come together.
Transfer the walnut meal to a bowl and add the remaining ingredients. Mix with a wooden spoon until fully combined, then scoop out the dough with a spoon and form balls. Flatten the balls slightly into cookie form, and you’re ready to enjoy.
*Make these cookies vegan by substituting agave or maple syrup in place of the honey!
