For many of us, the New Year is a definitive starting point, a moment in time in which it makes sense to us to begin things. The closing of the year brings introspection, self-evaluation, and an acuter awareness of the passing of time, as well as marking the end of holiday indulgences–which is why it’s unsurprising that people cut back on calories, especially those that they drink. This cordial recipe is a sophisticated, herbaceous alternative to the New Years champagne punch and will send your guests out with a clearer head for the ride home!

3 cups water
1/2 cup of organic agave syrup
Juice of 4 large limes
Thai basil, or, if not available, muddle regular basil and peppermint together
Club soda

In a large saucepan, heat water and sugar, stirring constantly, until the syrup is completely dissolved. Allow to cool completely, to room temperature. Add the lime juice and stir in, then refrigerate, covered, until cold.

In a cocktail shaker, pour 2 ounces of the lime mixture and add 3-4 leaves of Thai basil, or 3 leaves of regular basil and 1 leaf of peppermint. Muddle together, then cover with ice and shake. Add club soda and stir together, then pour into a highball glass, garnish with a lime slice or sprig of basil, and enjoy with spicy food, refreshing salads, or on it’s own! You can also make a batch of this and serve it in a beautiful glass pitcher or punch bowl.
