1 cup of peas serves two to four people
Prepare ice bath by emptying entire ice cub tray into one cup of
cold water and set aside-must be handy.
Bring to boil one quart of water with one teaspoon of salt.
Drop fresh peas into water for up to 45 seconds. IMMEDIATELY strain peas and drop into ice bath. This will prevent them from cooking longer and retain their color. If you are not using immediately you can store in sealable plastic bag for up to two days.
